Penne Alt-Fredo


My friend Justin sent this recipe to me and thought that it would be a good one for the blog. It's for a slightly healthier, less fuss, version of Alfredo sauce. Instead of fettucini he has opted for whole wheat penne or rigatoni. Personally I am a big fan of rigatoni. (regular though.. I know whole wheat is better for you, but at this point who cares?! You're dumping cream and cheese all over it. I really don't think the pasta is gonna make a difference!)

Here is Justin's recipe. Also I need to mention he has created it for a party of one, complete with music selection and wine pairing! Thanks Justin!

Ingredients:
1/2 lb Barilla Whole Wheat Rigatoni or Penne cooked Al Dente (boil for 8 minutes)
For the sauce:
1 oz. Philadelphia Cream Cheese, cubed
1 tbsp unsalted butter
2 oz. grated parmigiano reggiano
2 oz. whole milk or cream
1/4 tsp. garlic powder
1/3 tsp. oregano
1/3 tsp. fresh minced basil
1/4 tsp. red pepper flakes
a dash of sea salt and fresh ground black pepper


Music: Ella Fitzgerald: "The best of the Songbooks"

While Ella croons, on a low flame melt the butter in a small saucepan or frying pan. Add the cream cheese and melt until creamy. Immediately add the grated parmigianno and seasoning and blend until smooth. Add the cream and stir until creamy. Pour over cooked pasta and thank yourself for an excellent meal.
For best effect, enjoy with a modest glass of Chianti.
